I'm sure I'm not alone in finding auto headlights rather intrusive, and would prefer to switch headlights on and off when I choose.

Yes, you can reset this function after each start up, and you can reset the auto function during rain. But is there any way to permanently have headlights switched on and off manually?

Possibly via VCDS, however given the increasing number of people I encounter who drive at night with just their DRLs on and consequently no tail lights, (presumably they think their headlights are on) I peronally think all cars should have auto headlights as the general public cannot be trusted to exercise common sense.

If you think about it the auto light feature fitted in modern cars these days are a sensible safety feature and prevent drivers from 'doing their own thing' which is to be applauded as it significantly enhances road safety. Why in heavens name would you want to switch them off. I don't understand. What is intrusive about them?

Intrusive because they switch on in broad daylight, and stay switched on.

There must be something wrong if the headlights switch on in ‘broad daylight’. They are only supposed to come on if it is a particularly dull day, or if it’s raining, or if you’re in a tunnel.
