My Audi takes ages for its diesel engine to warm up, according to the temperature gauge, probably about 5 miles before the temp reaches normal.

I have purchased a new thermostat in its housing but have not fitted it yet as the water temperature seems unequal either side of the thermostat which tells me its working OK.
Also the fan funs for a while after parking the car which is odd. Even when the radiator is not hot.
    Any ideas?

5 miles is good! i could drive 10 miles to work some days and it isn't up to temp. The fans run on my mrs newer a3 2013 but i think again this is normal.

Agree with Jim, 5 miles is very normal.

When the fan runs on at shutdown, it's usually because the engine has just finished or is in the middle of a DPF regen.

The fans run on for a few minutes to cool the very hot DPF.
