There is normally a code to give you a clue, what did you scan it with?

Could be blocked DPF or Cat Collapsed, open the oil cap and try to start it.

The car shutting down on its own, without any codes, is truly bizarre. You sure there is nothing stuffed in the exhaust?

Look in the diagnostic measuring blocks for the fuel rail pressure, and see what that does when you start it. It should be reasonably steady for a given load and RPM, but if it wildly bounces around, then there is a problem. More likely the pressure regulator, but possibly the pressure sensor, or the pump itself. Another thing- is the fuel supply good? clean filter, contaminated fuel etc?

I changed the fuel filter, when I remove the fuel hose and turn on the fuel pump, fuel comes constantly, when I start the engine and look at the fuel pressure, it comes up to 510bar before the engine shuts down, and that's what's driving me crazy no error codes no lights on the display

Is it possible that it is the camshaft sensor without showing an error code?

I would suspect the crankshaft speed sensor known as the G28, these are well known for failing and not leaving a code. View the rpm data from the ECU to see if it drops to 0 instantly as it is cutting out.
