    Going back to the OP, what is your coolant temp indicating when the oil temp drops ? Do they tend to decrease together? Some of these engines have a 4/2 way thermostatic valve, not sure on you engine code but i've also read of some cr engines having a second thermostat fitted jnside a hose. Looking at the vw workshop manual there does seem to be a fair bit of gear to get out the way to get to the valve housing, hence you car being in bits and labour costs, and the complete valve assembly should be replaced rather than just the stat.
    If you can get an OBDII reader or vcds you should be able to check and trend oil and coolant sender outputs.

    Here's a quick update with some more details!:
    I took it back to the garage and they've identified the problem (but they don't know how to fix it!).
    They told me that the EGR Temp Sensor was permanently reading 80C regardless of temp, this was causing the "Accessory Water Pump" to be constantly pumping the water round. They replaced the sensor but this did not fix the issue.
    They have now unplugged the pump, which has made the Oil Temp issue go away, but I'm left without my secondary water pump and my Engine Light on!

    Any ideas?
