Because the remaining air in your system has reached the master cylinder?

Or perhaps the master cylinder has now gone? Either way, because your clutch is
on the same system as your brakes, you should get it into a VAG indie for
diagnosis and quote at least

can you put a piece of wood between seat & clutch pedal and jam the pedal down over night

then with the air hopefully being forced up to top of pipe at clutch pedal, bleed it there instead of nipple

you could run engine as well to boost bleeding

is the slave cylinder inside the gearbox on this model ?
