Right then, time for a little update. The head is off and there was a little sleeve, basically in the head gasket, which was interfacing with the head bolt that was sticking out. The threads in the hole look ok (as in they are there), however i think they've been mashed as i can't get a bolt passed the first thread. I'm thinking since there is still some thread there i could try and stick a tap down it to clean the thread up a bit.
Assuming i've figured out how to insert pictures properly here's the head gasket withe the sleeve thing.

yes, there re usually 2 sleeves (dowels), they go into slighty larger head bolt holes and are there to ensure the head and the gasket are perfectly aligned. if the thread looks ok then i would try a tap, and you will need 2 more of those dowels.

You may not get a tap all the way down. You can cut a slot in each side of an old head bolt with a very thin cutting disc. run a die up the threads and use the bolt to chase the hole. A little grease in the slots will lift crud and help ease it in
