what would be infinitely easier would be to sell the golf and drive the bora - or is that not possible?

Probably engine + whole electrical system including ECUs, clocks, dash and CCM, whole exhaust (providing it fits, may have different routing for petrol/diesel), whole cooling system (certainly different petrol/diesel), fuel tank, brakes, suspension (diesels are heavier).

    ^^what he said^^
It's a ton of work but you will probably get away without changing the windows, but pretty much everything else has to be moved.

He might be able to reuse the parcel shelf also.

Seriously, there an old adage, "don't try and build what the factory has already built."

I don't want to urinate on your camp fire, it's a jolly nice idea and everything but the cost would be so high it just doesn't make sense at all - it'd be far more financially sound to sell both the golf and the bora and buy a diesel mk4 golf - they're pocket money now and any issues that crop up will be easier to fix because you won't be questioning whether it's the car causing the issue or the way you built it.

    QFT

Insurance companies are pretty understanding now about mods (when declared) but how would you even begin to declare this one once it's done?

I'm pretty sure you'd need to have the car reclassified too (DVLA?) but I might be talking out of my posterior in that regard.
