Got this warning the other day it will start beeping then display the warning and go away it never stays on and comes on intermittently. The ABS is working fine and no loss of performance of the brakes. Is this just something small like low brake fluid.

as above check the fluid, then check the pads iirc the waring light wire is only on the n/s/f but id be tempted to check both sides, if the fluid is low and topping up puts the light out then id say your pads are very low

Mine did this 2 years ago during the cold weather - it was just a case of topping up the brake fluid as it had dropped slightly when the pads had worn down. I think the cold weather may also cause the fluid to contract slightly?

It is virtually impossible to see the fluid level through the reservoir on the Passat though!

I had this occur a few times this year, checked fluid level, ok, pads ok. I disconnected the plug from the level sensor and it has been fine since.
Just check fluid level when you check oil level, coolant level, power steering fluid level etc. Its a crap system that relys on a zero signal for the fault condition, if the wire fails it should go into alarm condition! so its not worth replacing the level sensor.

Is there any specific fluid I should use or does the quality have a big impact like with engine oil? Otherwise I can just top it up with any dot 4.

Any DOT 4 is fine, it is said to be better to but it from a popular shop that hasn't had it sitting around for years.
