If you are using the standard wheel and just changing tyres you would use the same size winter tyres, i.e 245/45 R18 as per the summer tyres...
I have a Skoda Superb 4 x 4 which I use at weekends and fitted Michelin CrossClimate tyres for all year use, they seem excellent on snow and ice, including getting up my driveway which is a slope with no slip or spin.
Have Cross Climates on the Passat and would recommend them. In my experience putting winter tyres on and off rims over a several seasons doesn’t do them any good - so you if are a lower mileage driver Cross Climates would be better. So far this winter - and it is a proper one up here - the Cross Climates are doing as well as the Nokians I have on the A7.
