My ex wife has a Passat1.8T and the oil pressure sensor is faulty - intermittent stop engine alert on dash. Which fuse disables this alert or can you turn off the beeping sound which accompanies engine alerts on the dashboard display.
Yes.
 
Change the oil pressure sender, that will sort it, if that is what is causing the fault.
 
Not that expensive if it is just the sender.
 
Hopefully it wont be the 1.8T oil slugding issue.

The red oil pressure warning is what we in the trade call the “idiot light” and only and idiot disables this system. The 1.8T is extremely prone to oil pressure problems due to sludge blocking the sump, please do not assume it is a faulty warning system, I have seen countless 1.8T engines and turbo’s written off by this problem. Is it a yellow level warning or a red pressure warning?

Red STOP ENGINE warning . Only intermittent though and the oil has been changed recently.  My ex wife just wants the beeps to stop doesnt mind the warning display - She is driving next week on a business trip and will get car booked in to VW dealer to sort out problem on her return.

If the oil pump is blocked/on its way out then you'll be lucky if the engine survives the journey!

As others have said.... this needs to go to a garage now! if it is the "common" oil pump problem, then she will be paying for a new engine, rather than a much cheaper repair.

For Christ’s sake man listen will you! These engines are prone to blockage of the oil pump pick up and no amount of oil changing will clear it. If you leave this it WILL seize the sodding engine and write off the turbo as well. Please get the sump removed and the oil pick up strainer cleaned out. I have seen literally hundreds of these engines do this, in the USA it was such a huge problem it nearly caused VAG to pull the 1.8T engine out of the US market. We aren’t messing you around here, just trying to save you thousands of pounds in damage.

Don't mess about when it's an oil warning light. Listen to these people... people like Crasher (he isn't the only one either) have saved me lots of time and money in the past. The forum is here to provide you with information and advice... please use it.
