Is it possible to install a newer (1T0 035 680 P) RNS510unit in my 2011 Passat, which has the unit 1T0 035 680 C installed today (broken)?

Yes, should be a straight swap with a little bit of coding to make it work correctly.

Could I code this with Bosch or do I need VAGCOM for that?

Not sure which "Bosch" you're talking about. But certainly VCDS will work fine.
