External thermostat going nuts!!

At first it was occasional but now it’s all the time. The temperature recorded outside goes from the correct temp right to -30c, even -41c . It’s like a yoyo, as I drive I see it going up and down, it’s driving me nuts.

It may be coincidence but I’ve noticed regardless of the temp in the car and the temp I request, the air blown out varies from cold to warm. Could this be as a result of the outside gauge?

Any suggestions on what could be at fault would be appreciated, can anyone tell me where I find the thermostat so I can check it is still there and isn’t covered in mud or been chewed by a mouse or similar.

Outside temp. sensor is in front of the rad. lw down, have a look under the front bumper.
The aircon temp going up and down could be a flap stuck.
