Can anybody advise if when replacing the rear discs that the calliper bracket must be removed to get the disc off. The two 10mm Allen bolts ( 8mm Allen key ) are reported to be almost impossible to remove. I would like to avoid removing the bracket if possible. Any help appreciated.

It varies, a lot of the later VAG models now let you do this, in some cases only just and heavy rust inside the bell can stop it coming off. Also I have had cases where the old disc is worn and it comes off but the new one won’t go on.
