How much do I have to worry about this clogging up?

I have just changed jobs and my mileage will drop from 25k pa to probably less than 10k of short journeys. So I am a little concerned that I'll start to have problems.

Does anyone have any experience of this?

    No, it doesn't.

Short journeys will slowly kill your DPF, consider selling it for a petrol car.

What's the minimum type of journey I should make to prevent problems? I could probably take the car out for a bit of a run a weekends.

Once a week, 60mph in 4th gear for 30 mins will suffice.

I'd be selling it and getting a petrol car as you'll pay more for fuel and a cold Diesel engine isn't fuel efficient.

You say that but my 1.9 tdi estate indicates 34 mpg short run to the shops from cold .

The previous car was smaller , lighter with a 1.7 petrol that would adverage overall 30mpg in a labritory !

Try doing that same run in a modern diesel.

You don't realise how heavy the 3G Passat is also and it's sheer size, short runs lugging around weight won't help.
