    My car: VW Sharan 2008

I have VCDS (full version from Ross-Tech). I played a little with it to day.

A VDO test it send text to the MFA+ and text also poped up on the display on my radio (Radio Navigation System MCD - original navi with the small screen).

When using the radio station name or CD track are displayed at the MFA+ display. I also get navigation info if I use the navi.

Is it any way to use VCDS to monitor/log the data traffic between the radio and the MFA+ display?

No. There is no means for the diagnostic monitoring functions to monitor/log the data flowing between the modules. In diagnostics, the tool makes a request and the ECUs then send the data requested when they have a chance to do so. It's never done in real time. The data flowing between the modules is real time and you would have to get some communication equipment to let you connect between them and monitor the actual messages flowing.
