Can anyone tell me how to remove the steering wheel from a B7 3.0TDI tip so that I can fit a new stalk.

As far as health and safety and all that lark, it is recommended to disconnect your battery, I personally dont.
Turn your steering until you can see 2 little removable sections on the rear of your wheel, pluck them out and in there, you will find a 30 torx screw, losen these screws ( they will not come right out ) and that will release the airbag. Make sure your key is only at the first click if you still have your battery connected ( no ignition lights on )
Remove the clip on the end of the airbag wiring loom by sliding the red clip on the loom towards you and at the same time pulling gently. Now you will see the multi spline bolt holding the main wheel on. Remove this and hey presto.

    Be aware not to :

Turn the airbag slipring while the steering wheel is removed.
Turn your ignition ON with the airbag removed ( it will store a fault in your airbag unit and make your warning light stay on )

Maybe someone can tell you the torque settings for the spline but be carefull not to over tighten it as it will ring off very easy.
