The unit is overheating, usually caused by air in the coolant system,or depending on which unit is fitted the circulation pump in the unit has stopped working

When the unit overheats it shuts down, and will restart, when the coolant temperature(in the unit) cools down.you may not notice this! I need to know the type of heater to answer your question,as not all of the heaters have a built in ciculation pump.

As a starter you can
When the engine is warm the cooling system is under pressure. If necessary release pressure before commencing repair work.
No air is permitted in the coolant circuit, if the additional water heater is to run free of faults.
Raise front of vehicle approx. 50 cm with a lifting platform/hoist.
Top-up coolant.
Lower vehicle again and perform a test drive until the engine reaches operating temperature and switch additional water heater on.
Raise front of vehicle approx. 50 cm with a lifting platform/hoist.
‒ Top-up coolant.
Note:

Repeat sequence until coolant circuit is free of air bubbles.

That is the next step if you are sure there is no air in the system, the pump is easy to replace
