Assuming that what you have done is all correct and that your water pump is pumping, would you see similar problems if the thermostat had jammed in the closed position, thus not allowing correct circulation?
Just an idea

Paul, just re-read your post and realised you fitted new stat at the same time,is it possible that the pump or stat are either not fitted quite correctly or maybe one or the other is sub-standard items.

Paul, I don't know the 1.8 well, but I've done it before on a 2.0 Pinto P100 truck
Here's hoping

Think you have an air lock in the system, the thermostat can only be fitted one way

Paul as said I dont know your car specifically, but according to the boys you should follow the heater pipes in the engine bay and once loosened a bleed hole will appear on the insert before the hose comes to the end of the inner steel pipe which goes into the car,if you see what I mean

Release the coolant hose going to the heat exchanger and pull back the hose until the bleeder hole in the hose is no longer blocked by the connection.
Top up the coolant until it emerges from the bleed hole in the coolant hose without bubbles.

Well done Paul that's a bonus, isn't it worrying how we (myself included) automatically start looking for something more sinister before the obvious ,ha ha
