This is probably a daft question, but I'm not sure so I will ask anyway.

What is the difference between Polish and Wax and what are the pro's and con's?

polish is a very mild abrasive which allows the paint to shine, wax is non-abrasive and more of a sealant.

As above. A polish will remove some of the clearcoat but a wax provides protection to the paint. You should only look to polish a car 1 - 2 times per year, but wax more often - probably 3 - 4 times per year. Only polish if the car really needs it.

Paint needs to be properly prepared before applying wax - washed, clayed, polished (if needed) and then wax applied (couple of coats). Of course this is a simple routine and many more steps can be put in place!

washed mine at weekend, clayed it then waxed it, came up good, need some more wax though, only just got it done before it ran out, need some more clay lubricant as well

polish can remove some clear coat depending on which one it is, AG SRP is very mild and wouldnt pose any problems.
