Anyone know how, or even if it is possible, to enable anti hijacking locks on an allroad so the car automatically locks itself when you drive away? Does the ******* have to do it?

Yes it is possible

Yes a dealer can do it but also someone with VAG-COM can do it for you

Is it possible to do this without a vag-com? Either via a 'secret' shortcut or a hidden menu for user defined settings??

I believe you can do something like this on the new model Passats, but I'm not familiar with the process.

What year is the Allroad?

2006 - the last one sold in the country of it's type! (not the current model that has been out about 6 months) It's also a 2.5TDi 180bhp if it matters.

I only ask as I can easily do such things on my Golf.

Then you may well be able to, but I wouldn't know how.

I've had a look at www.ross-tech.com (makers of VAG-COM) for more info and have found the following;

From that, if I'm reading it correctly, it doesn't appear you can code your doors to lock :(

Maybe ring your local dealership to see what they say?
