Passat 04

Have an 04 Passat 2.0 and has just started to over heat when going above 2700. Runs no problem at 90 degres, as long as I keep the revs down.

Also just noticed the fan always turns off with the car - even after just having gone to 120 and dropped back to 90. Any ideas? Thermostat/water pump?
