I have a W reg Audi A4 - It has the Audi Concert Cassette player in it. I have a CD changer connected to it.

What i would like to do is - Connect an AMP & SUB to the system but it has no RCA outputs on the back of the head unit...

Is there any way of wiring up an AMP & SUB to the system without comprimising the existing sound quality too much...?

Can anyone help me with this...?

I am looking to do the same to my 98 Avant with the standard concert stereo with 6 disc multi changer and non-bose speaker setup. Can it be done as I would love to retain the original look of the dashboard?

EASY!
You need a RCA to speaker controller, I have found a few for you:

I'd go for one that has a controller so you can tweek the audio better... They are simple to install just run along side your current wiring!

I've never installed a sub & amp into a OEM system so not sure about the sound quality.

Hope This helps
