I want to connect my ipod to my car stereo but in order to do this i require firstly an aux lead and then need to remove the front fasica and stereo etc to fit it. How easy is it to remove said pieces?

If it's a Mk5 Jetta it should take you no more than 5 minutes to get the stereo out. No idea about the Mk6, but I'd imagine it's not much different.

Is it possible to remove the stereo without removing the whole trim and dash surrounding it?

Nope. The tray on the top, air vents and dial surrounds have to come off.
